Cava needs time to become a Great Cava
And people, too.
Cava Guilera is a small family-run winery from Penedès [Barcelona] founded in 1927. We like to contribute positively to society; with landscapes, products and quality time. At Cava Guilera we believe that cava and people need time to harmonise the inside. We make long-aged cava and cultivate calm between the vines.
We only make Guarda Superior Cava: Reserva and Gran Reserva. A minimum of 18 months up to 17 years of aging to reach the maximum harmony of cava. Small productions: 40.000 bottles per year.
All of our Gran Reserva cavas have been awarded in highly prestigious wine competitions with blind tastings: Premis Vinari in Catalonia and Decanter World Wine Awards internationally.
Organic vineyards, traditional and dry grapes, pasture and green pruning with sheep, replanting of traditional trees, rural garden with wild grass, biodiversity and photovoltaic energy.
Experiences with the owners, naturally and without rush. Wine bar, cava tasting, gourmet picnic, winery tour, electric bike route, motorhome site and train 10 minutes walk.
The cava needs time to integrate the explosiveness of the carbonic, soften the acidity of the cava and achieve the fine bubbles that we like so much. It also needs time to express the richness of aromas and flavours of each vintage.
And here the role of mothers is very important.
The mothers are the sediments resulting from the second fermentation and their function is to protect and nourish the cava. Citrus, ripe fruit, toasted, smoked, sherry... Everything is thanks to the intrinsic nature of the grape, the generosity of the mothers and the art of patience © house brand.

Cava needs time to become a Great Cava. And to achieve this goal, we give each vintage the time it needs. Time to harmonise and let it be, in the welcome darkness of the cellar. Long-aged cava has many lives: it emerges splendor and also goes out of tune. Vintages must be listened and tasted.
Vintages are the expression of a moment, that is why we are grapes and time. We trust in the intrinsic nature of the grape and are fascinated by capturing the moment. Remembering who we were and what we were doing. Time enriches and brings new perspectives. Productive and explosive youth vs. deep maturity and richness in nuances.
It is the pleasure of buoyancy, which is almost magic, and we miss it by running.
Faced with the frenetic pace of life, we offer an oasis of tranquility among vineyards. A rural, ecological and dry garden where you can blend in with the landscape and taste unique products. The art of nature, the art of conversation, the intrinsic art of all things! If we breathe, observe and inhabit the moment.
How do you feel when you relax and turn down the volume on your mind? Don't you see different? The light is broader and the colours shine brighter. Everything happens more slowly and the microworld of the ants becomes more present. Everything is the same, we are different.
