New Year's Poem 2022: let's give it shape, in the meantime
2021 of mud, thick and bizarre. Let's grab it with our hands, the mud. And let's shape it, meanwhile. Because everything is still weird. Even when? Let's shape it

Guilera
Cava needs time to become a Great Cava
And people, too.
Cava Guilera is a small family-run winery from Penedès [Barcelona] founded in 1927. We like to contribute positively to society through landscapes, products, and quality time. Balancing the demands of the dominant paradigm with our most authentic and relevant feeling. At Cava Guilera we believe that cava and people need time to harmonise the inside. We make long-aged cava [Reserva and Gran Reserva] and cultivate calm among the vineyards.
We only produce Guarda Superior Cava: Reserva and Gran Reserva. Minimum 18 months up to 18 years of aging to achieve the maximum harmony of cava. Small productions: 40,000 bottles per year.
All of our Gran Reserva cavas have been awarded in highly prestigious wine competitions with blind tastings: Premis Vinari in Catalonia and Decanter World Wine Awards internationally.
Organic vineyards, traditional and dry grapes, pasture and green pruning with sheep, replanting of traditional trees, rural garden with wild grass, biodiversity and photovoltaic energy.
Experiences with the owners, in a natural and unhurried way. Winery tour, wine bar, cava tasting, gourmet picnic, electric bike ride, space for motorhomes and train station 10 minutes walk.
The cava needs time to integrate the explosiveness of the carbonic, soften the acidity of the cava and achieve the fine bubbles that we like so much. It also needs time to express the richness of aromas and flavours of each vintage.
And here the role of mothers is very important.
The mothers are the sediments resulting from the second fermentation and their function is to protect and nourish the cava. Citrus, ripe fruit, toasted, smoked, sherry... Everything is thanks to the intrinsic nature of the grape, the generosity of the mothers and the art of patience © house brand.
Time to harmonise and let it be, in the welcome darkness of the cellar.
Cava needs time to become a Great Cava. And to achieve this goal, we give each vintage the time it needs. Time to harmonise and let itself be, in the welcome darkness of the cellar.
At first, everything is explosive and acidic. The yeasts trigger the second fermentation in the bottle, and the sugar is converted into carbon dioxide and alcohol. The aging process begins with the mothers, the sediments that nourish and protect cava. The bubbles refine, and the vintages express themselves: citrus, ripe fruit, toasted, smoky, sherry notes… It's all thanks to the intrinsic nature of the grape, the generosity of the mothers, and the art of patience © house brand.
It is the pleasure of buoyancy, which is almost magic, and we miss it by running.
In contrast to the hectic pace of life, we offer an oasis of tranquillity among the vineyards. A rural, ecological, dry-land garden where you can blend in with the landscape and taste singular products.
We like quality and simple life and we trully wish that you feel better after visiting us. The experiences we design have two objectives: to promote cava culture and to offer a healthy space. Slow life, slow or decelerated life, among vineyards and with the owners. The art of nature, the art of conversation, the intrinsic art of all things! If we breathe, observe and inhabit the moment. It is the pleasure of buoyancy, which is almost magic, and we miss it by running.

We are all inclemencies and experiences [settling, resting, floating] in a glass bottle.
Building a history through different generations. From the founding great-grandparents, who were sharecroppers, until today, when we are a small family-run cava winery, specialised in long-aged cava.
Remain through time, stacking vintages and capturing moments. In the end we are all inclemencies and experiences [settling, resting, floating] in a glass bottle. And each of our cavas tells a story and is dedicated to someone in the family. The big bang for the great-grandparents, the sunset for the grandparents, the Mediterranean mosaic for my father, the blank canvas for Jordi, the pink lighthouse for Miguel and the cava nymphs for the xarel·litas of the house.
Cava Guilera and Cultura Rimaires: cava is culture and culture takes care of us.
Rimaires is the desire to live in another paradigm, an adventure that moves at its own pace. We like collective catharsis and we organise charming festivals among vineyards.
Cava is culture and culture takes care of us. This is how we link Cava Guilera and Cultura Rimaires, two independent projects that work together synergistically. Cava is culture because it shapes our Mediterranean landscapes, underpins the economy of the region and adorns tables, celebrations and traditions. And culture takes care of us because it embraces us and transports us to new dimensions. A universe of ephemeral forms, nesting and pampering the so-forgotten emotions.
