Cava needs time to become a Great Cava
Cava Guilera is a small family-run winery from Penedès [Barcelona] founded in 1927. We like to contribute positively to society; through landscapes, products, and quality time. Balancing the demands of the dominant paradigm with our most authentic and relevant feeling. At Cava Guilera we believe that cava and people need time to harmonise the inside. We make long-aged cava [Reserva and Gran Reserva] and offer eco-contemplative experiences among vineyards.
We only produce Guarda Superior Cava: Reserva and Gran Reserva. Minimum 18 months up to 18 years of aging to achieve the maximum harmony of cava. Small productions: 40,000 bottles per year.
All of our Gran Reserva cavas have been awarded in highly prestigious wine competitions with blind tastings: Premis Vinari in Catalonia and Decanter World Wine Awards internationally.
Organic vineyards, traditional and dry grapes, pasture and green pruning with sheep, replanting of traditional trees, rural garden with wild grass, biodiversity and photovoltaic energy.
Experiences with the owners, in a natural and unhurried way. Winery tour, wine bar, cava tasting, gourmet picnic, electric bike ride, space for motorhomes and train station 10 minutes walk.
Liveliness is one of the most distinctive features of our long-aged cavas. They remain fresh thanks to Xarel·lo, our star grape, and reveal their depth and richness with great elegance and subtlety. At Cava Guilera, we like our cavas to blossom from the inside out, exploring the magical imagery of cava and expressing the light and colours of the Mediterranean.
In 2015, we began designing a collection of haute couture dresses, featuring award-winning inclusive Braille, collaborations with artists, and cava family tributes. This project [under construction] is part of the commitment #artarreu art everywhere. A responsible and disruptive form of communication that harmonises layers of content through beautiful and meaningful creations.

The Best Wines of 2023: The first sparkling wine in the selection, with possibly the best cava from an unknown producer in existence. Guilera is a family winery founded in 1927 that doesn't hold back when it comes to producing long-aged sparkling wines. This 2006 isn't a bottle-rack collection; it's the latest vintage for sale from its top of the range: Agosarat. Guilera Agosarat translates as "bold" or "daring," and I couldn't agree more, as they translate all this aging into subtlety, not baroque. It's an austere, sharp, and unfriendly wine [wine insiders like that]. A marvel.

La Vanguardia's 2025 wine guide, 100 wines you can't miss, 96 points: Musivari could be the weapon of seduction that James Bond [Pierce Brosnan] would use to win over secret agent Jinx Johnson [Halle Berry] while they exchange flirtatious double-entendres in Cuba. It could, because its flavour evokes the great sparkling wines of the world, and its delicate finesse and elegance are extremely seductive. Remember: "Jinx, in the game of love, the best wines are those that leave an unforgettable taste on your lips."

Wine of the Week – December 2023: With an unbeatable price, the Xarel.la Gran Reserva 2012 Brut Nature combines two of the most powerful trends in cavas currently produced in the Penedès: the use of the Xarel.lo variety and long aging. The wine maintains hints of herbs [fennel, aniseed] and hints of apple alongside the toasted bread notes typical of the aging process. Without any evolution, the palate is well-defined by the acidity, with well-integrated bubbles and good persistence. The feminine name of the variety is not a mistake, but a tribute to the woman illustrated by the cava nymphs who have been christened “Las Fabulosas Xarel.las.”

100 awesome wines 2023: Xarel.lo is one of the three classic Cava grape varieties, and probably the one with the most exciting prospects for quality. This feminised [and organic] Xarel.la is a delight: light on its feet with delicately appley fruit, but with an underlying mineral, earthy note. This is a magical combination of a crowd pleaser which will also appeal to wine nerds – what more could you want?

Catalan Rosé Sparkling of the Year 2025: Rosé tends not to be the strongest category of sparkling wine in Penedès, but the imaginative Cava producer Guilera has come up with a wine of pure pleasure, capturing plenty of deep and juicy fruit without some of the rusticity that tends to afflict others attempting similar styles. It avoids over-extraction, pulling out beautifully vivid Garnacha and Pinot Noir aromatics whilst staying snappy and bright enough to push all the refreshing buttons that rosé ought to. There might be more serious rosés out there, but Guilera deserve recognition for having a little fun, too.

The best low-cost cava of 2021: Guilera Brut Nature Reserva. One of the best value sparkling wines of all those made in our country. A cava to fill the trunk so that you can eventually fill the pantry, just like in the old days. A cava to fill your glass during an appetiser, where you have to fill the time while you wait for the meal to finish cooking. A cava, in short, to fill a table with joy and pleasure, as that is also what the art of drinking cava is all about: knowing that bubbles can be solemn and emotional, of course, but without forgetting that bubbles are specialists in filling us with happiness. At first, everything is explosive and acidic. The yeasts trigger the second fermentation in the bottle, and the sugar is converted into carbon dioxide and alcohol. The aging process begins with the mothers, the sediments that nourish and protect cava. The bubbles refine, and the vintages express themselves: citrus, ripe fruit, toasted, smoky, sherry notes… It's all thanks to the intrinsic nature of the grape, the generosity of the mothers, and the art of patience © house brand.

Building a history through different generations. From the founding great-grandparents, who were sharecroppers, until today, when we are a small family-run cava winery, specialised in long-aged cava.
